Regina's Tomato Ragout and Meatballs

Ingredients for Savory Ragout 2 Medium Onions 3 Celery Ribs 4 large Carrots ¼ cup Flat Leaf Italian Parsley 12 Cloves of Garlic 3 Pork Ribs 1 bottle Red Wine 750ml.6 ounces Tomato paste 60 oz. can Italian Plum Tomatoes (do not pour off juice, puree in food processor)2 teaspoons Oregano 1 teaspoon Crushed Red Pepper 1 tablespoons Basil Puree1 teaspoons Black Pepper 2 teaspoons Salt (you can add more after it is cooked if needed)
Directions for Ragout 1- In food processor chop Onion, Celery and Carrots. Use the pulse button. You do not want to puree the Vegetables. You want them to be coarse.
2- In large heavy Dutch oven or sauce pot, brown Pork Ribs Turn and make sure they are well browned. Add the chopped Onions, Celery and Carrots, stir, and cook for 8-10 minutes.
3- Chop the Garlic and Flat Leaf Parsley and add to pot. Add the bottle of Red Wine and scrape the bottom of the pot. Add Tomato Paste and pureed Plum Tomatoes. Simmer for one hour, scraping the bottom of the pot every 15 minutes.
4. Add Oregano, Crushed Red Pepper, Basil, Salt, and Black Pepper. Continue to simmer for one hour more, stirring every 15 minutes, scraping the bottom and sides of pot. 11- Take the Ribs out, serve separately with a plate of Italian sausage and meatballs.
