Onion Dip with Pastrami Smoked Salmon

Onion Dip with Pastrami-Smoked SalmonIngredients: make 2 cups of dip•3 tablespoons butter•2 1/2 cups yellow onions, diced•1 teaspoon salt•1 teaspoon black pepper•1 teaspoon onion powder•1/4 teaspoon cayenne pepper•4 ounces cream cheese cut into cubes•1/4 cup mayonnaise•1/2 cup sour cream•1/4 lb smoked salmon•1 bag bagel chips (serve with Bagel Chips)Notes: I would top this dip with Russ and Daughter'spastrami smoked salmon. Any good quality thinly slicedsmoked salmon works.1. Melt the butter in a fry pan over medium heat.2. Add the onions, salt, pepper, onion powder andcayenne pepper. Cook for 5 minutes, stirring. Thenreduce the heat to medium low and cook for 20-25minutes, stirring occasionally. The onions should besweet and golden. Remove from stove and allow tocool.3. Place the cream cheese, sour cream, and mayo ina bowl, mix until smooth (use microwave in 10 secbursts if needed to assist)4. Add the caramelized onions. Mix until just combined.Refrigerate at least 2 hours.5. Garnish with thinly sliced strips of smoked salmonand serve with bagel chips.
